Factors that can influence flavor include:
- Seasonal changes in farm environment like water temperature
- Variations in a fish's diet during a specific harvest window
- Environmental conditions at the farm during that particular cycle
This is no different from how the flavor of a peach or a grass-fed steak can shift from month to month depending on conditions. It's a feature of real food, not a flaw.
When things are not normal:
Seatopia seafood should not smell "fishy." It should be clean, neutral, or "oceanic" reflecting the environment from which it came. Seafood should not be stored defrosted, in the refrigerator, still in its vacuum sealed packaging. Over time this will create off flavors.
